Iced Coffee Recipe: Easy Thai Iced Coffee!

Saturday July 11, 2009
Easy Thai Iced Coffee Now that the summer is heating up, I've replaced iced coffee with regular coffee and find it makes a very refreshing change, whether for breakfast or as an afternoon pick-me-up (I also find it's great before or during a work-out!). And it's easy to make too. Just check out my Easy Thai Iced Coffee Recipe which can be made with freshly brewed coffee, leftover coffee from breakfast (a great way to use it up!), or even instant coffee. The key to Thai iced coffee is to use only sweetened condensed milk. This is what gives the drink its richness - at the same time, it also means Thai iced coffee is lower in fat content than regular iced coffee. Serve over ice on a warm day, or with a little of your favorite liqueur for a delicious after-dinner drink. Here's to summer! (photo by D.Schmidt)

Best Chicken Curry! - Classic Chicken Curry Recipe

Wednesday July 8, 2009
Thai Curry Chicken There's nothing like a good chicken curry. Around our house, it's our number one favorite dish, and this is our new favorite recipe: Thai Classic Curry Chicken. This curry is made with chunks of chicken and potatoes, and tastes like one of those wonderful curry dishes you can find in the marketplaces and streets of Bangkok, as well as nearly any Asian marketplace. The use of curry powder helps the dish come together quickly and easily. If you can, look for a good Madras curry powder at your local Asian or Indian food store - a Madras blend works well with Thai flavors, and will give you far better results than your average supermarket curry powder. ENJOY! (photo by D.Schmidt)
