Thai Glass Noodles in a Savory Sauce Work some culinary magic with my recipe for Thai Glass Noodles in a Savory Sauce. Healthier than wheat noodles, glass noodles are made from green beans, broad beans, and peas, which makes them gluten-free and a source of iron, calcium, and fiber. They are opaque (white) until soaked in water and cooked, at which point they turn transparent - hence the name "glass" or "cellophane" noodles. Look for them at your local Asian store sold in dried bundles/packages labeled "Longkou Vermicelli". Made with my savory chicken sauce, these noodles look - and taste - like pure magic! (D. Schmidt)
