Thai Red Chicken Curry with Summer Vegetables and Sweet Basil Summer vegetables such as cherry tomatoes and sweet peppers are now at their peak - and what better way to celebrate them than with a fragrant, easy-to-make Thai Red Chicken Curry? This healthy one-dish meal starts with a homemade curry paste - no store-bought pastes used here (which means no preservatives or other additives). And it's easy to make - just throw the ingredients together in a food processor and you have the makings of a restaurant-quality curry dish that will be sure to please every palate.
