Vegetarian Thai Green Curry (with noodles) With all those summer veggies at their best, it's good to have a vegetarian curry recipe on hand. Use mine as a guide, adding whatever greens take your fancy - or whatever vegetables happen to fill your local market stalls. This Vegetarian Thai Green Curry Recipe has all the authentic herbs and spices you need in a green curry - lemongrass, coriander seeds, green chillies, galangal, kaffir lime leaves, coconut milk - without the meat, but with meat substitutes - wheat gluten or tofu.
