15-Minute Meal: Quick & Easy Basil-Sesame Noodles (Vegetarian)

Monday September 25, 2006
Basil-Sesame Noodles Looking for a noodle recipe that's nearly as fast and easy as instant noodles (but much healthier and tastier)? Try my Quick & Easy Basil-Sesame Noodles. These yummy vegetarian noodles are made with a no-cook Thai-style pesto, easily created in a food processor or blender. Start with some fresh or dried rice, wheat, or egg noodles (round udon or Shanghai-type work well). While the noodles are boiling, make the pesto with ingredients like fresh basil leaves, sesame, and chilli. Toss the noodles with the pesto, and voila! -healthy, fast, and incredibly delicious noodles you'll want to make again and again. A perfect recipe for after work, when you want something good for dinner but don't feel like cooking. (photo by D. Schmidt)
