The Colors of Autumn: Thai Prawn & Pumpkin Soup

Monday October 16, 2006
Prawn & Pumpkin Soup This yellow curried soup is a soothing comfort food when the weather turns cooler. Squash may be substituted if pumpkin is unavailable, or make a vegetarian version by adding chickpeas instead of prawns (vegetarian instructions included). Whatever way you cook it, you'll have your guests asking for second (and third!) helpings of this Thai Prawn & Pumpkin Soup. And its bright array of autumn colors means you're getting the nutrients you need to stay healthy as cold and flu season sets in. (photo by D. Schmidt)
