Coconut Pudding Cake can either be served as a pudding or a cake. For coconut pudding, serve it warm out of the oven with a dollop of coconut milk on top plus a sprinkling of toasted coconut. For coconut cake, bake the batter in a loaf pan, then simply cool and slice. Either way, this Thai coconut treat is extremely moist and delicious, plus it's a healthy, gluten free and low fat dessert.
