St. Patrick's Day Recipe: Pandan Rice Cake

This year for St. Patty's Day, why not make something different - but still extremely green: Thai Pandan Rice Cake. This steamed rice cake recipe calls for Thai "sticky" or "sweet" rice, plus a little rice flour instead of wheat flour, which makes it a healthier, gluten free recipe. And unlike most green desserts, this cake is colored with a sweet herb that grows in Southeast-Asian known as "pandan". Aside from its green coloring, pandan leaf lends a unique flavor to the cake quite unlike anything you've ever tried. Pandan paste or "essence" can be purchased very cheaply (in very small bottles) at your local Chinese/Asian grocery store, and can be used with other desserts, drinks, etc. - any place where you would like a touch of Irish green!
