Thai Glass Noodles If you've tried glass noodles, you already know how great they taste. But tasting them is one thing - cooking them is where you get to experience the magic of these unique noodles! So why not try making this savory Thai Glass Noodles Recipe this week? "Glass" (or "cellophane") noodles are thin and as transparent as the name suggests. Healthier than wheat noodles, they are made from green bean, broad bean, and/or pea flour, which makes them gluten-free and a source of iron, calcium, and fiber. What makes them magical is that they are opaque (white) until cooked, then they begin to turn transparent. Look for them at your local Asian store sold in dried bundles/packages (to be sure they are glass noodles, just check the ingredients - look for bean or pea flour). Stir-fried with my savory Thai sauce, these noodles are truly irresistible! Includes instructions for vegetarians. (photo by D.Schmidt)
