Thai Grilled Chicken Salad is guaranteed to thrill your taste buds! It makes a nice fresh and light spring dinner, and it's also easy to make. Start with strips of chicken breast or thigh marinated in a garlic-peppercorn rub. The chicken is then either grilled on the barbecue or broiled in your oven (it's great both ways - see recipe for easy instructions!). Place the hot grilled chicken strips over a bed of summer greens that has been tossed in a lemongrass-coriander-lime dressing.
