Sweet, Sweet Potato! - Try this New Baked Sweet Potato and Yam Recipe

Baked Sweet Potatoes and Yams Need a side dish for your family or to take to a dinner party this weekend? For a delicious vegetable side dish, try making this new Baked Sweet Potato and Yam Recipe. In Thailand and throughout Southeast-Asia, in addition to regular sweet potato, purple yams are also popular. Although usually deep-fried, for this recipe I decided to bake them, which means they're healthier plus simpler to make for most North American cooks. Purple yams can be found at most Asian markets in the fall, but if you can't get them, sweet potato is just as delicious on its own, or you can substitute regular yams. Carrots are good mixed in too! Just toss with a little oil, add a few spices and pop in the oven for 45 minutes. So easy, so good. ENJOY! (photo by D.Schmidt)

Is it normal that when you boil purple yams in water, the water will become deep green ?

Yes, purple yams when boiled will release a dark purple-green color which is completely natural. In fact, this color is where your nutrients lie, so if you want to get the most out of your purple yams, it’s best to bake them, not boil them.
