New Rice Cake Recipe: Festive Pandan Rice Layer Cake (gluten free)!

This pretty and festive Pandan Rice Cake is perfect to make during the holidays or any time of year. Made with sticky rice, coconut milk, and a little rice flour, this rice cake is a gluten-free dessert recipe as well as lactose-free. It's also not as sweet as most Western-style cakes, and much lower in calories and fat. Flavored (and colored) with pandan paste, this rice cake is delicious served on its own, or you can dress it up with some fresh fruit and a sprinkling of toasted coconut.
