Fabulous Fish Recipe: Classic Thai Fried Fish with Tamarind-Chili Sauce

Start your new year with some fabulous fish from the Thai kitchen! This Thai Fried Whole Fish is a Thai classic. It's also very flexible - if you wish, it can be barbecued or grilled (instructions included) instead of fried, and you can use nearly any type of fish. In Thailand, small to medium whole fish are used for this dish. I usually make it with rainbow trout (1 small one per person), or with whole snapper (shown). With both types of fish, I've found the taste to be just as I remember it from the beaches of Thailand.
