Delicious Curry Chicken: Thai Jungle Curry Chicken Recipe!

If you like curry, check out this fantastic curry chicken recipe from northern Thailand: Thai Jungle Curry. A splendid variation of red curry, this chicken curry is based on the famous dish from in and around Chiang Mai. While Jungle Curry is usually made with wild meats, here I've created my own version using chicken. I've also taken the liberty of adding a little coconut milk, which I find adds more thickness and flavor to the sauce.
