Noodles made a terrific dinner choice this time of year, providing us with the carb-protein combination we need to stay warm, energized, and healthy. For easy-to-make noodles that taste amazing, try these Easy Thai Basil Noodles (vegan/gluten-free). These noodles turn out chewy-wonderful and absolutely popping with flavor! Rice noodles, fresh basil, garlic, and cashews are the key ingredients in this dish which just happens to be healthy too (vegan/gluten-free). It starts with a fresh and quick-to-make Thai-style pesto which is then briefly fried up with rice noodles. Add a final topping of chopped cashews plus a little more basil, and you have a noodle dish that is so good and so easy, you'll want to make it again tomorrow night. ENJOY! (photo by D.Schmidt)
