I can't think of anything that tastes better on chilly Monday in February than a warm chicken curry.  There's just something so comforting and uplifting about curry, and like chicken soup, I find chicken curry especially soothing to the soul. For a perfect curry you'll be proud to serve, try one of these Thai Chicken Curry Recipes. These dishes are straightforward to make, and you don't need any packaged spice pastes to create them.  Homemade curry is easier than you think, and very healthy, replete with vitamins, minerals and lots of antioxidants (found in all of those lovely spices).
