After a hard day at work, there's nothing like a hot & soothing-to-the -senses curry. And homemade curry ensures you're getting a nutritious dish that will boost both your energy and your mood, keeping you going for the rest of the week. But not all curry recipes will give you the flavor-rich results you're looking for. If you're a fan Thai and/or Indian chicken curry, I encourage you to try this Classic Thai Chicken Curry. This is my family's favorite - and that's high praise from an Asian curry-loving family (including my Southeast-Asian inlaws!). It's a classic yellow curry made with chunks of chicken and potatoes. But unlike a lot of Thai curries, this one is made with curry powder, which means it's easy and faster to make than starting with a paste. Try it and see how fabulous homemade curry can be!
