In late February the weather can fluctuate between mild and downright chilly, at least for those of us in more northern climes.  On such days few things can satisfy for dinner like a hot, flavor-rich curry. It's everything you need in one dish, and as a cook, making this complex-tasting dish from scratch gives a person so much pride and pleasure. And yet you'd never believe how simple it can be!
