This time of year, we all crave fresh, zesty-tasting meals that aren't as heavy as those we enjoyed in winter. Using fresh herbs is one way to satisfy your spring food cravings, and what herb is more delicious or beautiful than basil? This Thai Basil Noodles Recipe (vegan/gluten-free) is so fresh-tasting and yummy, plus easy to make. The noodles turn out chewy-delicious and absolutely popping with flavor! Rice noodles, fresh basil, garlic, and cashews are the key ingredients in this dish which just happens to be healthy too. It starts with a fresh and simple-to-make Thai-style pesto which is then briefly fried up with rice noodles.
