This Thai Pumpkin and Prawn Soup is wickedly delicious! Vegetarians can substitute chick peas for the prawns without losing any flavor or nutrients. To make it every more Halloween-y, consider serving it in a small, carved-out pumpkin (or pumpkin-like squash). I did this at my last Halloween party, and it was a big hit. Pumpkin-carving and presentation instructions are included with the recipe.
Main Course: Vegetarian Thai Pumpkin Curry :
