Kaffir Lime Leaves

Definition: Kaffir Lime is a dark green fruit distinctly different from the limes we commonly see in North America, easily distinguished by its knobby skin. In Thai cuisine, it is mainly the leaves that are used, adding a unique lime flavor to soups, curries, and sauces. These leaves are available at most Asian specialty stores, and can be purchased fresh, dried, or frozen. I recommend the fresh and the frozen for a more intense flavor and aroma.
