Preparing a Container for the Ice Cream

To make an ice cream cake, prepare a loaf pan by lining it with parchment paper OR 2 layers of plastic wrap. To make plain ice cream (not an ice cream cake): simply have ready a large tub or other covered container(s).

ICE CREAM INGREDIENTS:

  • 4 eggs
  • 1 cup sugar
  • 2 cups (500 ml container) heavy cream (whipping cream)
  • 2 cups thick (good quality) coconut milk or cream
  • 1 tsp. vanilla flavoring
  • 2 tsp. coconut flavoring
  • For Ice Cream Cake CRUST/TOPPING:

    • 1/2 cup peanuts
    • 1/2 cup dry shredded unsweetened coconut
    • 2 Tbsp. sugar
    • 3 Tbsp. melted butter
    • an extra handful of lightly chopped peanuts (for topping)
