To make an ice cream cake, prepare a loaf pan by lining it with parchment paper OR 2 layers of plastic wrap. To make plain ice cream (not an ice cream cake): simply have ready a large tub or other covered container(s).
ICE CREAM INGREDIENTS:
- 4 eggs
- 1 cup sugar
- 2 cups (500 ml container) heavy cream (whipping cream)
- 2 cups thick (good quality) coconut milk or cream
For Ice Cream Cake CRUST/TOPPING:
- 1/2 cup peanuts
- 1/2 cup dry shredded unsweetened coconut
- 2 Tbsp. sugar
- 3 Tbsp. melted butter
- an extra handful of lightly chopped peanuts (for topping)
