To make the crust for the ice cream cake, simply place 1/2 cup peanuts, 1/2 cup shredded unsweetened coconut, 2 Tbsp. sugar, and 3 Tbsp. melted butter together in a food processor. Process to form a thick paste-like mixture.
If you do not have a food processor: grind the nuts by placing them in a plastic bag and smashing them with a hammer/mallet. Or use a peslte & mortar if you have one. Then simply mix them together with the other crust ingredients (listed above).
