Coconut Ice Cream Cake

Measure out 2 cups coconut milk (approx. 1 can). If there are any lumps (some coconut milks are actually composed of coconut cream on the top with coconut water/milk beneath it), use a fork or whisk to break up the lumps and create a smooth milk. Set aside.
