Do not store your rice cakes in the refrigerator, as this will only dry them out. But do be sure to place them in a sealed container once they're cool, and consume within 3 days.
If desired, once the rice cakes have cooled, remove them from their "mats" and place in small to medium-sized cupcake papers. These sticky rice cakes are especially nice to serve around the holidays. Enjoy!
