31. Amazing Vegetable Stir-Fry with Tofu (Vegetarian/Vegan!)
Use all those wonderful fresh fall veggies to create this exciting new stir-fry! This dish sings with so much flavor, you'll forget all about its amazing health benefits (plus it's vegetarian and vegan too). The tofu topping is delicious, but optional - if you just want vegetables, you'll still get a terrific stir-fry out of this recipe. Hope you enjoy it as much as my family does.
32. Tamarind Chicken Stir-Fry
Most Thai recipes are a combination of sweet, sour, and spicy, and this recipe is the epitome of this delectable description, although you can choose to make the dish mild (without chilies) and it will still turn out wonderful and rich-tasting. Stir-fried with plenty of fresh shiitake mushrooms (or the mushrooms of your choice), this savory chicken dish will satisfy everyone at your table. Enjoy!
33. Easy Sweet & Sour Sauce (for Chicken, Pork, Fish, Shrimp, or Tofu!)
This recipe for sweet and sour sauce is easy and tastes so much better than store-bought mixes. It's also healthier for you (no additives or preservatives), and can be made vegetarian/vegan too. Give this one a try, and you may just put away your take-out menu next time a sweet and sour craving hits.
34. Simple Thai Chicken Satay (for Oven or Grill!)
This easier version of Thai Chicken Satay is authentic and so juicy & flavorful, you'll want to make it for guests as well as family. As a bonus, this satay recipe can be made in your oven as well as on the grill, which makes it perfect for the 'if-y' spring weather. I have made it in my oven in the middle of winter, as well as on the grill at the height of summer - always good no matter what. Serve with my easy (authentic) peanut sauce and rice on the side, or just enjoy straight off the stick! - either way it's delicious.
35. Thai Beef Satay (for the Grill or Oven!)
This authentic beef satay recipe will blow you away with its abundant flavor and tenderness! The secret to good satay is all in the marinade, and this satay marinade is simply the best (passed down through my husband's family to Thailand and Malaysia over many generations). This aromatic marinade features a special blend of fresh herbs and spices, yet it's very easy to make. Cook your satay on an outdoor grill or in the oven - either way it's simply fantastic!
37. Honey-Garlic Grilled Chicken
This Thai version of Honey Garlic Chicken turns ordinary chicken breast or thigh into an amazing-tasting meal, plus it's easy to make. Here I've grilled it, but it's just as wonderful baked in the oven (both methods included here). Makes a great family dinner served together with rice or over a salad, or whatever side dishes you desire. Also great for guests, as it appeals to all tastes, even kids.
38. Beautiful Thai Grapefruit (Pomelo) Salad
Pomelo Salad is one of the most famous of all Thai salads, and makes a refreshing appetizer, side dish, or main course. Pomelo is a citrus fruit similar to grapefuit. Smaller pomelos are grown in Mexico, and these appear similar to grapefruit, varying in color from green to pink/coral (the larger Asian variety are also grown there). Note that grapefruit can easily be substituted for equally delicious results. This salad makes a terrific summer lunch or side salad. ENJOY!
40. Thai Grilled Ginger-Garlic Shrimp (for the Grill or Oven!)
For great Thai shrimp that's also a cinch to make, try this easy & delicious recipe. Medium to large shrimp/prawns are doused in a Thai ginger & garlic sauce, then either grilled or oven-broiled just a few minutes for beautiful results. These shrimp can be skewered with satay sticks/BBQ skewers, or just cooked up as they are (the larger the shrimp are, the easier to grill individually). ENJOY!
