1. New Mango Cake (Easy!)
This mango cake recipe is so fresh, fluffy and delicious, plus it's simple and fun to make. In Thailand cakes like this are served at all the big hotels where chefs add ornamental garnishes prepared with fresh mango and coconut. Here I've simplified the process while keeping the original taste. And what is that? I'd describe it like a little trip to mango heaven. ENJOY!
2. Thai Sesame Salmon (Baked or Grilled!)
This beautiful Thai sesame salmon recipe is simple to make and is just perfect for spring and summer cooking. On cooler or rainy rains, you can bake it in the oven (delicious this way!), or if outdoor conditions are good you can grill it. And the sesame marinade/sauce works with other types of fish as well - I've made it with sesame cod and halibut both with excellent results, so feel free to choose your favorite fish and then get cooking!
4. Thai Grilled Eggplant (Vegan)
Eggplant is delicious on the grill, and this recipe makes it even better with the use of a Thai-inspired marinade. You'll enjoy its sweet-spicy flavor - makes a superb side dish to any meal you might be cooking (Vegetarian and vegans: see tips below recipe for how to make this dish into a complete meal). 6. Thai Lemongrass Chicken (Easy!)
Street cooking in Thailand is kept simple, with a minimal list of ingredients, and yet the food tastes so exquisite. You'll find the same to be true with this easy recipe for Thai lemongrass chicken. Don't be fooled by the simplicity of the ingredients - when they're put together what results is sooo delicious. This recipe is derived from my adventures talking to street cooks in Thailand and watching what they do - the only difference here is that the chicken is baked instead of grilled or stir-fried. Easy & delicious!
7. Thai Fried Rice with Shrimp
This shrimp fried rice is just as tasty as it looks, owing to a simple Thai concoction of 3 key ingredients that make for a flavor-popping experience. Shrimp are yummy in this dish, but can be easily substituted with other protein sources for equally delicious results (e.g. fried tofu or chicken). Fried rice is one of Asia's favorite comfort foods, something North Americans are beginning to pick up on. If you've enjoyed the fried rice you've had at Thai restaurants, be sure to give this one a try - I think you'll find it just as good, or maybe even a little bit better (!).
8. Thai Waterfall Eggplant Salad (Vegetarian/vegan)
Nam Tok is a traditional Thai dish from the Northeastern part of the country. Although it's usually made with beef, this vegetarian version is just as delicious and so very satisfying. I always think of Nam Tok as a Thai version of our grilled chicken salad (only better!), with both hot (cooked) and cold (fresh) in the same dish. Be sure to give it a try!
9. Tangy Thai Baked Chicken
This delightful Thai baked chicken turns out tangy-delicious and a beautiful reddish color due to the (all-natural) ingredients in the special marinade/sauce that accompanies it. This dish is a pleasure to serve both family and friends, and even kids enjoy it. It's an easy dish to make given that most of the ingredients will likely be available in your pantry/refrigerator, and enjoy kids love it.
10. Easy Baked Honey-Soy Salmon
This baked salmon comes out beautifully, plus it's easy to make. The marinade is a simple mixture of Thai sauces with fresh herbs and spices that comes out tasting similar to teriyaki, but is essentially Chinese-Thai in origin. This is one of my personal easy go-to recipes when I want delicious-tasting salmon without too much fuss and bother. Great with rice, but also lovely with new potatoes. Enjoy!
