As a bonus, this satay recipe can be made in your oven as well as on the grill, which makes it perfect for the 'if-y' spring weather. I have made it in my oven in the middle of winter, as well as on the grill at the height of summer - always good no matter what. Serve with my easy (authentic) peanut sauce and rice on the side, or just enjoy straight off the stick! - either way it's delicious.

This mango cheesecake is a kind of 'ode to the mango', and is always an unexpected surprise for guests at my table. In Bangkok these days, you can find nearly every type of Thai dessert as well as those which are creations of Thai chefs who've been trained abroad; this creation belongs in the latter category. I'm not a huge cheesecake fan, but I love this one - it's delightfully light and delicious with a subtle mango flavor that your family and friends will be sure to savor.

6. Thai Chicken Lettuce Wraps

These Thai Chicken Lettuce Wraps are delightfully fresh - perfect for spring! - and the taste is tantalizingly Thai. You'love the combination of warm filling with the crisp, cool lettuce (cabbage, large spinach leaves, or fresh roll wrappers can also be used). When it comes to making a good wrap, the filling is everything, and this Thai version is especially good, made with lightly marinated chicken which is stir-fried and then accented with both mint and basil for a perfect marriage of flavors.
