1. New Thai Lemon-Coconut Shrimp

Luscious Thai Lemon-Coconut Shrimp!
D.Schmidt for About.com
This luscious shrimp recipe features lemon and coconut flavors combined with succulent shrimp for a taste experience you won't want to miss. Thai food is known for its exotic and oftentimes heady combinations, and this is a prime example of this description. Who could imagine this dish is also a cinch to make? Coconut milk is key, along with some fresh lemons, garlic, chili, and fresh coriander. I like to make this dish for guests because it never fails to impress.

2. Greatest Thai Grilled Chicken!

Thai Great Grilled Chicken!
D.Schmidt for About.com
This Thai grilled chicken dish is the ultimate summer grilling dish. First the chicken is drenched in lime juice which is left to marinate at least 2 hours. You then sprinkle on a dry spice mix and grill it up. It's served with an authentic Thai condiment that you spoon over as you eat. We enjoy it with plain jasmine rice but it's also fantastic served over crunchy summer greens.

3. Thai Salad with Grilled Garlic-Chili Shrimp

Imagine crisp summer greens topped with succulent Thai garlic-chili infused shrimp, all tossed up with a tangy Thai dressing. This magic concoction is marvelously simple to make yet impressive to serve. Wonderful on its own, or paired with your favorite white wine. I love to serve this dish for a special lunch or as a dinner salad in the evening.

4. Easy-Breezy Summer Pad Thai

Pad Thai with Shrimp

You'll find this recipe easier than traditional Pad Thai recipes, and yet the taste is all there. Many of you are discovering that tamaraind paste - a traditional ingredient in pad thai - is difficult to find. Believe it or not, tamarind wasn't part of the original recipe which is the one you'll find here.  Instead lime juice is used, and you'll find this simple swap makes pad Thai a cinch to put together.

5. Thai Grilled Ginger-Garlic Shrimp (for the Grill or Oven!)

Thai Grilled Ginger-Garlic Shrimp
For great Thai shrimp that's also a cinch to make, try this easy & delicious recipe. Medium to large shrimp/prawns are doused in a Thai ginger & garlic sauce, then either grilled or oven-broiled just a few minutes for beautiful results. These shrimp can be skewered with satay sticks/BBQ skewers, or just cooked up as they are (the larger the shrimp are, the easier to grill individually). ENJOY!

Simply roast covered in the oven and meanwhile make the sauce on your stove-top, then put together just before serving. An exquisite dish that makes dinner into a true treat.

These Thai Grilled Chicken Skewers make for a delectable summer dinner treat!  They're made with chunks of juicy chicken, purple onion, red pepper, and fresh mango for a tasty Thai treat that goes well with rice or any other side dishes you may want to serve. This is quite simply the ultimate summer grilling recipe, an authentic Thai dish that has been passed down through my husband's family (from Thailand) for many generations. Strips of chicken (or beef) are marinated in a special Thai paste, then skewered and grilled. It is served with homemade peanut sauce for the ultimate taste sensation.
