This Mango Custard is a delicious Thai treat and a terrific way to enjoy fresh mangoes while they're in season. It also happens to be good for you (no heavy cream required!). You'll need two fresh ripe mangoes - or, if mangoes are not in season, canned mango may also be used (find it in the Asian section of your local supermarket). Makes a great dessert any night of the week, and you can whip it up and have it in the oven in just 15 minutes. I like it served warm but if the weather is hot it's also delicious straight from the refrigerator.

It features vermicelli rice noodles (available at any supermarket) and lots of fresh summer vegetables - feel free to add or substitute depending on what's available at your local market. You also have the option of tossing in cooked baby shrimp or tofu for vegetarians. Rice noodles are so much lighter in texture and calories than pasta noodles and yet they're just as fun and satisfying to eat. This healthy dish will prove a big hit at your next potluck, picnic, cookout or any kind of summer get-together!

These Thai Mussels make a beautiful gourmet-style dinner, and they're easy to make too. The curry sauce is created right in the pan, so you don't need to bother with curry paste or even a food processor.  And with the addition of fresh tomato, garlic, and coriander, this dish is perfect for early fall while all the fresh produce is so readily available!
