Tofu can be purchased soft, medium, firm or extra firm, and there is even dessert tofu.
When preparing a tofu entree or fried tofu (as in this recipe for fried tofu), you'll want to purchase medium to firm tofu, since "soft" will simply fall apart and dissolve (sometimes this is what you want, if your goal is only to add the benefits of soy protein without adding form or texture).
Shopping Tips:
- Be sure to check the expiry date. Tofu does expire - you'll know it's gone bad if there's a smell. Fresh tofu has virtually no smell.
- Look for tofu that contains calcium for added health benefits.
- It's always a good idea to buy organic tofu if at all possible, as soy bean crops are heavily treated with pesticides.
Storing Tip: Once opened, store any unused tofu in a covered container. Place tofu inside the container, then fill it with water (so that the water is covering the tofu). Cover tightly. Try to drain and replace the water daily until all the tofu is used up.
