This Easy Grilled Fish with Garlic-Pepper Sauce is simply fantastic! Fresh or frozen fish fillets or steaks can be used for this recipe, which includes a simple garlic-pepper sauce that marries beautifully both with mild as well as rich-flavored fish. Serve this grilled fish with rice or potatoes for an easy seafood treat. Perfect for everyday grilling, or serve this grilled fish when company come over. It smells so great on the barbecue, don't be surprised if your neighbors peek over the fence to see what it is you're grilling!

Ingredients:
- SERVES 2-4
- 3 to 6 fish fillets or steaks (thaw first if using frozen fish)
- 6 Tbsp. sherry (or cooking sherry)
- 4 Tbsp. fish sauce (available in tall bottles at Asian/Chinese food stores)
- 4 Tbsp. soy sauce
- 2 Tbsp. sugar
- 2 tsp. bottled, pureed garlic, OR 6 cloves, minced
- 1/2 tsp. fresh-ground black pepper
- squeeze of lime juice
- 1 tsp. cornstarch dissolved in 4 Tbsp. water
Preparation:
- Prepare the garlic-pepper sauce by stirring together the sherry, fish sauce, soy sauce, brown sugar, garlic, lime juice, and 1/4 tsp. of the pepper.
- Place fish in a flat-bottomed dish and pour 1/2 of the garlic sauce over. Lift and turn the fish, ensuring all sides are saturated with sauce. Allow to marinate at least 10 minutes, or cover and place in the refrigerator for up to 24 hours.
- Place fish over a hot, lightly oiled grill, or in a well-oiled fish cage. Once fish is on the grill, season with a little more of the freshly-ground black pepper.
- Depending on the heat of your barbecue and the thickness of your fillet/steak, the fish will cook in 10-20 minutes. Fish is done when inner flesh is no longer translucent and flakes easily.
- While fish is cooking, place remaining sauce in a sauce pan. Quickly warm up the sauce over medium heat until it bubbles, then turn down to low.
- Add the cornstarch dissolved in water. Stir well. The sauce will thicken.
- Remove sauce from heat and taste-test. If too strong for your taste, add a few more Tbsp. water. If too sour, add a little more sugar. If not salty enough, add a little more fish sauce. If not spicy enough, add more garlic (a little fresh chili or cayenne pepper can also be added). If too salty, add a squeeze of lime juice.
- Serve the grilled fish with rice or potatoes. Spoon the garlic sauce over fish (and rice/potatoes too, if desired). ENJOY!
