Prepare 5-8 ramekins (depending on how large they are) for baking. Lightly grease the ramekins with a little canola or other vegetable oil.

If Using Banana Leaves: If frozen, de-frost banana leaves before removing from the package. Cut a leaf into strips - if the strips are wide, you'll only need 4 per ramekin. If desired, cut each of these wider strips in half to make more of a basket effect. If desired, trim the strips so they are slightly taller than the ramekin.
