While Fish Cakes are Baking, Prepare Coconut Milk.

Thickening the coconut milk

If your reserved coconut milk (1/8 to 1/4 can) is very thick, you can skip this step.

If your coconut milk is runny, pour it into a sauce pan. In a cup, dissolve 1 tsp. cornstarch powder in 2 tbsp. water. Pour this into the coconut milk. Place over medium-high heat, stirring until the coconut milk becomes thick. Remove from heat and allow to cool.
