Thai Beer Nuts

If you like it spicy, you'll want to try making this nutty snack. Serve it with beer during happy hour for a taste of the exotic.

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients:

  • Serves 4+
  • 2 cups unsalted peanuts (raw or dry-roasted)
  • 1 cup dried anchovies (medium size)
  • 1 tsp. Thai red chilli paste (or more if you like it very spicy)
  • 1 tsp. shrimp paste
  • 2 Tbsp. fish sauce
  • 2 Tbsp. sugar (white or brown)
  • 3 Tbsp. peanut, sunflower, or other oil for stir frying
  • sea salt to taste

Preparation:

  1. Place oil in a wok or frying pan over medium-high heat.
  2. Add fish sauce, chilli paste, and shrimp paste and stir briefly (until fragrant).
  3. Add anchovies and stir fry 1 minute, or until fish have softened.
  4. Add peanuts and stir fry 1 minute more.
  5. Remove from heat and add sugar, stirring until dissolved.
  6. Taste for salt, adding sea salt if required.
  7. Pour snack mixture onto paper towels until cool.
  8. Place in bowls and serve with cold beer.

Note: this snack can be stored (in closed containers) in the refrigerator for up to 2 weeks.
