An authentic Pad Thai recipe for real vegetarian Thai food lovers, or those who want a lighter noodle dish without the meat. This Pad Thai recipe does offer adequate protein in the form of eggs (vegans can omit this ingredient), and ground nuts. Plus, because it's made with rice noodles, Pad Thai is a gluten free recipe. Although vegetables are not strictly part of traditional Pad Thai, I've added a little bok choy to make this dish even more nutritious. Try it - you'll love it!

This curried noodle recipe is a condensed version of an ancient Thai noodle dish called "Kao Soy". Since it would take half-a-day to make the original recipe, I've simplified it somewhat while still maintaining the delicious original taste. You can use dried egg or wheat noodles for this dish - or splurge and pick up some fresh noodles at your local Asian food store or grocery store deli. And while chicken can also be used in this recipe, I find soaks up that fantastic curry paste perfectly. ENJOY!

13. Stir-Fried Rice Noodles with Tofu

This easy stir-fried noodle dish starts with vermicelli rice noodles (called "vermicelli rice stick" at Asian stores). Added to the stir fry are shiitake mushrooms, red pepper, bean sprouts, and your choice of tofu or chicken. Add a special Thai sauce and you have a terrific noodle dish that's great for any occasion, from everyday meals to a party-worthy dish. As a bonus, these noodles are healthy, low-fat, and gluten free. They're so good, you'll simply eat them up!

Learn how to make Thai fresh rolls! This easy Thai recipe is quick to put together, and can also be made vegetarian (see recipe instructions). Makes a great finger food for parties and potlucks, or serve Thai fresh rolls as an appetizer or part of a main course (perfect with a Thai salad!). Fresh Rolls also make for great "munchies" in front of the TV. Fresh rolls are also a terrific snack for any time of the day - or night!

Fatigued and hungry revelers in Bangkok who seek a middle-of-the-night meal are given this spicy noodle dish (the hot chilies are meant to wake you up). But even milder versions are delicious, so if your spice-o-meter tends to stay near mild, not to worry - this noodle recipe is delicious with or without chilies. As a bonus, the addition of lots of vegetables means these noodles are healthy as well as delicious. So party on!
