This chicken turned out moist and so flavorful. My husband loved the taste of the lime - we thought it was nicer than the lemon roast chicken we used to make. I didn't slice it up like in the picture - it was too pretty the way it was coming out of the roasting pan. thanks!

Normally I LOVE your Thai food recipes, but this chicken bombed!The part in the bottom of the pan was really juicy and delicious, but the breast meat was sooooooooooooooo dry. I won't make that one, but I REALLY love your other Thai recipes, I use them all the TIME!

Took awhile to get to this recipe, but it was worth the wait!! As we don't do whole skin-on chicken (but love it), (used chicken thighs)I had to juggle the marinade quantities a little, but because of your fine teaching on ""tasting"" sauces and marinades, was able to really experienience the uniqueness of this excellent recipe. It will go in our ""favourite recipe"" binder, definitely!! We are going to slice the BBQ thighs, add same to a tossed salad, using your coconut-based salad dressing recipe, which we use often. Thanks!!

I've been using this recipe for a couple years now. Everyone loves it....even my in-laws that are hard to cook for. It also works great with turkey....I cooked a turkey using the lime marinade for Thanksgiving last year and it was a big hit!

I fixed this tonight & mis-read the instructions - I cooked it @ 425 instead of 400 & it got quite ""crispy"" - don't do that! The marinade/baste smells quite potent when it is simmering but isn't nearly that heavy to taste. The flavor was good even though I over-browned it & I will fix it again in the near future.

Absolutely fantastic. The chicken is beautiful and moist with a marvelous taste of lime. I have already made this recipe 4 times in the last 6 months and we spent 2 of them in Thailand.
